Here's an easier recipe.
If you're using 4pcs. (which is a normal pack) then here goes.... 20 C water, lots of garlic, 1 tablespoon salt, 1 pack achote powder, 1 onion, chopped(The bigger the better), 1 pack mongo beans(rinsed and ...unsoaked).
Throw everything except for the achote powder in a big pot, stir, cover and forget about it for 1 hour(If you want softened texture, like at Lindas cafe). After an hour, stir again and let it cook on medium high for another hour(If you want the same texture as kings[Perfect].) Make sure after this step that your water is still about 3-4 inches above the upper layer of the mongo and ham hock. Cook for about another half hour and then throw your diluted achote powder in and stir. Cook for another 20 minutes(uncovered) and then add one can of coconut milk and immediately turn off your heat. You're done. Here, you will have a thick sauce with tender ham hocks and mongo beans, bursting with flavors that will surely rock your pallet.
