Daikon Radish, cleaned and sliced 1 - 1 1/2
2-3 slivers Mango' (yellow ginger/tumeric)
Lg Pot Boiling Water
2-3 Cloves Garlic, thin sliced
Teaspoon Salt, plus salt to taste
Donne, red pepper
1. Add a teaspoon of salt and mango' to boiling water. As soon as water starts to yellow richly, remove mango' and add daikon and blanch for approximately 30-45 seconds, depending on how thin or thick your slice.
2. Quickly drain into a colander and run cold water over daikon to cease further cooking, then put in a large bowl.
3. Add your garlic and enough vinegar that your daikon is half submerged, salt and donne to taste. Equally distribute daikon and liquid into sharing jars, seal and refrigerate.
