Ingredients

4 Large Eggplants
2 lemons (Juice)
Salt
Red Hot Peppers
Green Onions
White Onions
1 Cup Coconut Milk
Pam Cooking Spray

Cooking Instructions

Spray the baking pan and eggplants with Pam...preheat oven to 350 degrees, bake eggplants for 45 minutes to one hour! Turn eggplants every 20 minutes to cook all sides. Soak in cold water for 15 minutes, then peel skin of eggplants, cut into bite size pieces and place in serving bowl.

Cut all onions into small size pieces. In a bowl, squeeze the juice out of 2 lemons, add salt, white onions, green onions, chopped red hot peppers and half a can coconut milk or 1 cup...Sprinkle green onions on eggplant...Pour coconut milk finadene over eggplant, stir and serve.
